Fish in a bag

Hi everyone,

today I am going to share with you one of my fave recipes. I love cooking fish in a foil bag and have been doing it for years. It is a great way of cooking – it is healthy and, by keeping everything in a little bag, the flavours are beautifully intense. You can prep this in a advance, a lovely thing to find waiting for you in the fridge.

Ingredients (for 1 person):

  • 2-3 potatoes
  • fish
  • 1 onion
  • 1/2 a carrot
  • parsley
  • lemon
  • sea salt
  • olive oil
  • foil


Cut the potatoes into quarters (large potatoes into eighths) or into slices, however you like. Place them into foil bag with carrot, onion, parsley, fish and lemon slices at the end. Now add sea salt as much as you need or like, and 1 or 2 tablespoon olive oil. You can keep this for a day or two in the fridge. But if you want to make it for todays lunch then preheat the oven to 225°C and cook for 50 minutes. Once cooked, place the bag on a serving plate and gently pierce to release the steam. Lovely!
